Instant Pot: Chicken Noodle Soup

You'll never make chicken noodle soup from a can ever again! This 40 minute recipe from start to finish tastes like its been slow cooked all day long.


Dig in!

Ingredients:

One whole chicken, thawed

Two stalks of celery

One small onion

Two cups of baby carrots, or one large carrot

One tablespoon of freshly minced garlic

Celery Salt

Poultry Seasoning

Salt

Pepper

Two bay leaves

Extra Virgin Olive Oil (EVOO)

Four cups of water

Four cups of low sodium chicken broth

Egg noodles (wide, preferably)


Tools:

One Instant Pot

Knife

Cutting board

Medium sized bowl (for bones)

Large bowl (to open chicken package)

Liquid measuring cup

Large silicon spoon


-Chop celery, onions and carrots

-Turn IP to sauté' setting and add two tbs of EVOO

-Saute' onions first until slightly translucent, then add in celery, carrots and garlic and cook for one more minute

-While the veggies are cooking place the chicken (in plastic) in a large bowl and cut open

-Remove gizzards and discard

-Do not rinse chicken

-Pour water and stock into the pot, followed by whole chicken

-Generously season the chicken skin and the liquid with salt, pepper, celery salt, poultry seasoning and two bay leaves

-Put the lid on and close the vent

-Set for 20 minutes on "pressure cook"


-The IP will take 10-15 minutes to come to pressure, cook, then it will beep when it is finished

-Let it naturally release (you will see the pin go up in the lid when its released), pop open the vent and take the lid off

-Remove the chicken carcass and shred all the meat and skin and place it back into the IP

-Add one bag of egg noodles, cover and press "keep warm"

-Open it after 5 minutes, stir well, taste and season

-Place the lid back on and do the same thing after 5 more minutes until noodles are soft but not mushy

-Season to preference starting with celery salt and poultry seasoning before adding plain salt


Serve warm with Italian bread and butter.
