No Bake Protein Nut Butter Cups

Peanut butter cups are delicious but not so great for you. These taste like the real thing but have an extra punch of protein to keep you full and energized.


Dig in!


Ingredients:

3/4 cup of sunflower butter (you can use PB but sunflower is creamier which makes it easy to work with. I also prefer the taste)

1/2 cup of honey

1/3 cup of ground flax seed

1 tbs of coconut oil (melted)

1/2 cup of plain protein powder (this is my fav)

2.5 ounces of dark chocolate morsels

Large granulated sea salt for sprinkling


Tools:

Microwave

Glass bowl

Mixing bowl

Spoon

Silicon spatula

Small rectangular plastic container, or a small metal rectangular bread pan







-Mix sunflower butter, honey, flax, coconut oil and protein together in a bowl until well combined. Taste and add more honey if needed


-Melt morsels in a glass bowl for 30 second increments, removing to stir until melted


-Smooth nut butter mixture into the bottom of the container and top with melted chocolate and sprinkle salt.

-Refrigerate for 1 hour and then cut into bars

-Serve before or after a workout, or to curb your sweet tooth
