Southern Banana Pudding with Meringue

Good golly this banana pudding is scrumptious! Throw out the boxed stuff and get ready to wow everyone with this Southern staple!
Dig in!

Pudding Ingredients:
One cup of brown sugar
One tablespoon of all purpose flour
Two egg yolks
One whole egg
One and one half cups of milk
One box of Vanilla Wafers
Five bananas
Meringue Ingredients:
Two egg whites
White granulated sugar
Tools Needed:
Stand or hand mixer
Rubber Spatula
Medium sized sauce-pan
9x13 glass baking dish
Butter knife
Tablespoon

- Preheat the oven to 425 degrees
- Turn the stove top to medium heat and add one cup of tightly packed brown sugar and one tablespoon of flour to your saucepan and mix with your rubber whisk until no lumps remain
- Add your two egg yolks and your whole egg and begin mixing together
- Stir continuously with the whisk until the eggs and brown sugar / flour mixture are well incorporated
(Do not walk away because your eggs will scramble and you will have to start over.. How do I know this? Whelp).
- Slowly add your milk, whilst stirring continuously
- Turn the heat up until the mixture bubbles and keep stirring.
**Your pudding will thicken in about five minutes. If it does not thicken, turn the heat up a little more and keep stirring
- Once thickened, turn the heat off and give it a stir, smoothing out any lumps that may have formed (leave it on the burner)
- In the medium mixing bowl, add two egg whites and mix with your hand mixer or stand mixer on low speed until the egg whites are foamy
- Add one tablespoon of sugar while mixing
- Keep adding one tablespoon of sugar to the egg whites while mixing until you have used the 3.5 tablespoons of sugar
**I taste as I sweeten it but the egg whites are raw, so only do so if you are comfortable
- Turn the speed up to high and keep mixing until the meringue forms stiff peaks (it takes around 5 minutes if doing by hand)
- Set aside
- Line your baking dish first with cookies along the bottom and the edges, and then with bananas
- Layer cookies and bananas until the dish is full (cookies form the last layer on top), or you run out of bananas
- Give the pudding mixture a good stir again and pour over the top of the cookie and banana layers, first down the center, then down each side
- Top with meringue using your spatula
- Bake for 8 minutes until the meringue is golden
- Serve warm
